My Famous Meatballs

In a large bowl place 1 lb. of burger (I like the 85-90%lean variety), 1 egg, 1/2 cup of unseasoned breadcrumbs, and 1/4 cup of the Secret Sauce. Mix well. Form into your desired size balls; I like the size of a quarter. Many people use meatball (or small ice cream) scoops for uniformity. Place in a preheated skillet or fry pan. Do not use oil there will be enough from the meat. It is important to leave enough room in the skillet to roll the balls around the pan. When cooked, place the meatballs in a saucepan with your favorite Italian sauce and 1/4 to ½ cup of the Secret Sauce. Let the meatballs simmer on low for at least ½ an hour---as we know with Italian food, sometimes the longer, the better. These meatballs do well frozen and served later as a meal or an appetizer!

Best accompanied with:

  • Spaghetti Squash (recipe coming)
  • Ceaser Salad (recipe coming)

Because you are saving carb's with the spaghetti squash, serve up some warm crusty bread!
